Primary Beans x Tarka

We teamed up to create a recipe inspired by rajma, a traditional South Asian comfort food with beans simmered in a rich, spiced tomato gravy. Tarka is a heat-activated chili oil—the heat releases the oils and flavors of spices, enhancing their aroma and taste. Drizzle the tarka over tender, brothy beans for a meal that's simple yet rich in spice and complexity.

METHOD

      Prepare the beans: Cook beans according to the Primary Beans cooking guide in the cooking vessel of your choice. Once cooked, remove the aromatics and set aside.

      Activate the Tarka: add 2-3 TBSP to a pan over low-to-medium heat.

      Serve: Divide the brothy beans into bowls, top generously with tarka, and serve with yogurt, lemon, and toasted pita.
