METHOD

  • 1

Heat Tarka over medium heat in a pan. While tarka heats, spread a tablespoon of mayo on each slice of bread.

  • 2

Once Tarka begins to sizzle, lay both slices of bread in the pan mayo-side up. Lower heat to medium-low and let the bread toast in the pan for about 2 minutes.

  • 3

Flip each piece of bread over and divide cheese evenly on each slice of bread. Allow undersides of bread to get golden brown (about 4 minutes) while cheese melts.

  • 4

Carefully place one side of the sandwich over the other. Press down just slightly with your spatula—avoid pressing too hard or your cheese will overflow.

  • 5

Serve immediately with more tarka if you’d like.
