Ingredients
¼ cup of olive oil
1 orange
1 lemon
8 oz of Castelvetrano olives
2 cloves of garlic, smashed
1 tbsp Paro Tarka

Tarka Marinated Olives
METHOD

Heat olive oil in a small saucepan over low heat and add garlic.

Using a veggie peeler, peel 2 strips of lemon peel and orange zest both roughly 2 inches long. Add to olive oil. Grate 2 tsp of orange and lemon zest into olive oil. Let simmer over low heat for 2 minutes.

Add olives and Paro Tarka. Warm olives gently for 5 more minutes, being careful not to fry zest or olives. Remove from heat, you can let the olives sit in the warm saucepan. Finish with a squeeze of lemon juice.
